This cheese is eaten ten days after being prepared. Its flavour and texture vary, depending on the field where the cows have been eating their grass. It is prepared with pasteurized milk and vegetal rennet.

This is made of the milk of “Ruat” goats. Its maturation process lasts two months. The cheese is made with vegetal rennet and has a quadrangular shape. We have prepared an exclusive a limited series of 150 units.

This cheese is made with the milk of the autochthonous “red” sheep. The cheese has a maturation period of two and a half months, and has the traditional shape of the “fogasser”.
